Seafood

Food is life.  It nourishes, comforts, heals, rejuvenates and can fill the soul with joy.  It can unite families, bridge gaps, make new friends and inspire.  Food can transport the senses to far away places and break through cultural barriers.

When approached with an open mind and an empty stomach, food can be magical.  Just think about it a moment.  That first bite of something entirely unique and delicious can completely change a mood and a perspective.  Imagine landing in a far away land where you don’t understand one word being spoken.  You are all alone, no clue where you are or what anyone is saying but you sit down at some side street cafe and take a chance on what that guy at the other table is eating and wham!  A wave of comfort and joy washes over your tongue and things seem a little less foreign.  A little less scary and a little more exciting.  Food is an adventure.  Food is beautiful.

Marks & Spencer has been around for nearly 150 years so they sure know how to inspire.  I often watch this video when I lose site of how transformative food and cooking can be.

My whole reason for going to culinary school was not to be a celebrity chef or work in a Micheline star restaurant.  It was to learn and understand how to tap in to the art of food so that I could create something magical, the right way.  To experience watching someone’s eyes roll in the back of their head after taking that first bite of something I created.  That is awesome.
